Method 2 for chicken with garlic sauce Chinese

A plate of food

1 whole chicken

2 tablespoons vegetable oil

3 cloves garlic, minced finely

– green onions, chopped into long pieces, divided in half (root and stem)

-2 teaspoons ginger powder or paste

1 teaspoon salt

½ teaspoon white pepper or black pepper to taste.

1. Boil a pot of water on high heat. Add the entire chicken and cook for about 20 minutes. Pour out hot water and rinse off with cold running tap water until cool enough to handle. Drain and pat dry the entire chicken with paper towels before cutting it into bite-size pieces. Make sure that there is no blood remaining in the meat or else it will spoil the sauce color later). Set aside.

2. Heat up wok with oil on high heat, add garlic and half of the green onion pieces to stir fry until fragrant. Put in ginger powder or paste, chicken pieces, salt, and pepper. Sprinkle evenly over entire chicken pieces so that each piece is well seasoned. Stir fry until the color turns white before adding half a cup of water into the wok. Cover tightly immediately.

3. Bring the covered wok to a rolling boil over medium heat for about 15 minutes or more depending on the thickness of chicken pieces without opening cover. When boiling point is achieved, open cover and turn off the heat completely by removing wok from stovetop burner (this step is to create a shiny look for sauce).

4. Transfer entire contents into a casserole dish before decorating with remaining green onion pieces. Ready to serve hot with rice or noodles for lunch or dinner.
